Chef Jorge Báez From Humble Beginnings to Culinary Innovation

Chef Jorge Báez was born and raised in the Dominican Republic, where his passion for cooking was ignited at the young age of 15. When his mother immigrated to the United States in search of a better life, Jorge was left in the care of his 17-year-old sister. Although their mother sent money back home, his sister—caught up in young love—didn’t cook often, which meant Jorge was often left hungry.
That hunger, both literal and figurative, pushed him into the kitchen. A kind neighbor noticed his situation and took the time to teach him how to cook simple traditional dishes like bollos (Dominican cornmeal dumplings). It was in those early moments, learning to prepare meals out of necessity, that his love for cooking truly began to grow.
At just 16 years old, Jorge set up a small breakfast stand in his hometown. From early morning hours, he served traditional Dominican morning dishes, building not just a customer base, but a dream. He continued this entrepreneurial journey until age 19, when he immigrated to the United States.
Like many newcomers, Jorge started from the bottom—washing dishes at two different restaurants. However, it didn’t take long for his dedication and natural talent to shine. At an Italian restaurant where he worked, the kitchen team recognized his potential. Within just six months, he was promoted to work on the line. There, he was trained across all stations, from salads to desserts, gaining hands-on experience in a fast-paced culinary environment.
Today, Chef Jorge Báez blends his Dominican roots with international techniques, crafting dishes that are both soulful and innovative. With a deep respect for tradition and a modern culinary approach, he continues to serve as a proud ambassador of Latin cuisine.

De Comienzos Humildes a la Innovación Culinaria

El chef Jorge Báez nació y creció en la República Dominicana, donde su pasión por la cocina se encendió a la temprana edad de 15 años. Cuando su madre emigró a los Estados Unidos en busca de una vida mejor, Jorge quedó al cuidado de su hermana de 17 años. Aunque su madre enviaba dinero desde el extranjero, su hermana —enamorada como toda joven— cocinaba poco, lo que significaba que Jorge pasaba hambre con frecuencia.
Esa hambre, tanto literal como simbólica, lo llevó a la cocina. Una vecina bondadosa notó su situación y se tomó el tiempo de enseñarle a preparar platos tradicionales sencillos como los bollos (dumplings de maíz dominicanos). Fue en esos primeros momentos, cocinando por necesidad, donde nació su verdadero amor por la cocina.
Con solo 16 años, Jorge montó un pequeño puesto de desayuno en su pueblo natal. Desde tempranas horas de la mañana, servía platos típicos del desayuno dominicano, construyendo no solo una clientela, sino también un sueño. Continuó con ese emprendimiento hasta los 19 años, cuando emigró a los Estados Unidos.
Como muchos recién llegados, Jorge comenzó desde abajo —lavando platos en dos restaurantes distintos. Sin embargo, no pasó mucho tiempo antes de que su dedicación y talento natural comenzaran a brillar. En un restaurante italiano donde trabajaba, el equipo de cocina reconoció su potencial. A los seis meses fue promovido a trabajar en la línea. Allí recibió entrenamiento en todas las estaciones, desde ensaladas hasta postres, adquiriendo experiencia práctica en un entorno culinario de alta exigencia.
Hoy en día, el chef Jorge Báez fusiona sus raíces dominicanas con técnicas internacionales, creando platos que son tanto llenos de alma como innovadores. Con un profundo respeto por la tradición y un enfoque moderno de la cocina, continúa siendo un orgulloso embajador de la gastronomía latina.
